Chef Christopher Callender is a Jamaican-American culinary storyteller, author, and founder whose work sits at the intersection of heritage, creativity, and modern culture.
Born in Oyster Bay, Long Island, and raised in Royal Palm Beach, Florida, Callender’s culinary identity was shaped long before he ever stepped into a professional kitchen — formed around family gatherings, bold spice, and the quiet mastery of home cooks rather than formally trained chefs. His grandmother’s cooking, in particular, left a lasting imprint, grounding him in flavor as an expression of love, memory, and legacy.
Callender’s creative path began in fashion. He studied Fashion Design and Marketing before leaving his senior year to work alongside iconic designer Betsey Johnson in New York City. To support himself, he took a job waiting tables in a Sicilian restaurant — a decision that would change his life. Immersed in food, wine, and hospitality, he quickly distinguished himself through instinct, leadership, and curiosity. Within months, he rose into management, discovering a passion that would soon eclipse his fashion ambitions.
His career expanded rapidly across global cuisines, including a pivotal chapter as General Manager and later Director of Operations for a modern Indian restaurant and catering group. There, Callender developed a deep understanding of balance, spice, presentation, and large-scale operations — merging his fashion-trained eye with culinary precision. For him, the plate became a canvas.
After more than a decade in hospitality, Callender stepped back to reassess — channeling his discipline into fitness and wellness while experimenting with cleaner, intentional food and cocktail creations. That exploration gave rise to Cheat Healthier™, a lifestyle brand that quickly gained traction and re-centered him in the kitchen. Encouraged by his family — especially his mother — he fully embraced his calling as a chef.
Drawing from his Jamaican roots and global experience, Callender coined his signature style: New Caribbean — a refined, modern approach to Caribbean flavor that honors tradition while pushing it forward. This philosophy guided his work as an Executive Chef and consultant across New York City, where he reimagined classic dishes through a contemporary, culturally rooted lens.
His work has been featured by Forbes, Food Network, BuzzFeed, Pix11 News, and Cheddar News, and he is the author of Liquid Gold: Oxtail & Cocktails, a deeply personal tribute to his grandmother and the dish that shaped his culinary soul.
